Love Food, Hate Waste Ambassador

I am thrilled to announce that I’ve been made an ambassador for the State Government Love Food, Hate Waste program.

This program encourages and educates people and business’s of the importance of reducing food waste.

I will play an active role in this with public demonstrations of recipes and tips for tackling this problem that I feel so strongly about.

New partnerships

I’m please to announce the start of a partnership between Milners Brands and myself. Milners are the Australian distributor of many world class culanary brands such as Wusthof Knives and Greenpan cookware just to name a few.

As well as using there brands exclusively in my restaurant, mobile kitchen and home, I will be performing demonstrations around the place on there behalf.

I look forward to a long and successful partnership will Milners.

Darlin distribute many homeware products and were kind enough to supply my restaurant HUX with a full range of there beautiful Acacia wood plates and bowls,

Well with my soft opening on the 1st of February I’ve been flat out and learning a lot about what it takes to run your own kitchen.

I managed to clock up 117hrs work in the first week! Don’t think I can maintain that for long but I did enjoy every minute of it!

Lots of positive feedback on my food makes the grind much easier!

My grand opening is still the 24th of Feb but if your in the area drop past for lunch of dinner 7 days a week,11am-11pm!

Exciting News! I’m opening my first restaurant! HUX @Nortons

Well it’s official, in less than 12 months after appearing on series 3 of Masterchef Australia I will open the doors to HUX @ Nortons in February 2012.

Situated inside the Norton Hotel in Leichhardt’s icon Norton st, this will be pub food at it’s best.  With my lack of professional training as a chef hopefully elapsed by my love of food and cooking to bring the people of Sydney’s Inner West good value, fresh and tasty food.

The idea of my own place is exciting as I have free reign to cook whatever I please and more importantly what is seasonally available.

But I’m sure my pork belly won’t ever be too far from the menu!

My launch party will be the 24th of February at 7pm with lots of special guests.

I look forward to seeing everyone there!!

Holroyd Councils “love your leftovers” book launch

Launch of the ‘LOVE YOUR LEFTOVERS’ Community Cookbook

 

The community cookbook ‘Love Your Leftovers’ has been developed as part of Council’s commitment to the NSW Office of Environment and Heritage’s ‘Love Food Hate Waste’ program, designed to minimise food waste in NSW households.

 

The majority of recipes in the book have been sourced from members of the community who, along with their parents before them, survived periods of food scarcity. They respected food and were creative in developing ways to ensure that it was never wasted. This is a scrapbook of their recipes, memories and ideas that we hope will inspire you to also ‘Love Your Leftovers’.

 

A launch event will be held over 2 days at Stockland Merrylands.  There will be copies of the book available (both for sale and some as giveaways) as well as cooking demonstrations by MasterChef 2011 contestant Jay Huxley, using some of the recipes from the book.

 

So come along to the launch event and grab a copy of the book – with over 100 recipes, countless tips and snippets of community history, it will make a great Christmas gift!

Masterchef LIVE Sydney 7-9 October 2011…Come and meet me!

At this years Masterchef live festival of food, I will have my own stand. I will be demostrating my Circulating waterbaths as well as selling some really well known kitchen products at unbelieveable prices!

So come along and taste my 18hr lamb shoulder or 12 hour Porkbelly or just drop in to say Hi!!

MasterChef Live, the ultimate foodie’s event is back this year from 7-9th October, Royal Hall of Industries & Hordern Pavilion, Moore Park.

This year it promises to be an even bigger cooking extravaganza with more Masterclasses from judges Gary and George and some of Australia’s top chefs such as Kylie Kwong, Peter Gilmore, Adriano Zumbo, more free interactive hands-on cooking schools, Junior MasterChef workshops, and of course the chance to shop for amazing produce, fresh produce and cookware to help you become a MasterChef at home..

The Beautiful Barossa Valley

After a busy few months since leaving Masterchef I decided to take some R&R at the beautiful Barossa Valley in South Australia.  The Barossa Valley is approximately 1 hour drive from Adelaide and is considered by many as the “Food and Wine capital of Australia”.  The first time I visited the Barossa Valley was the weekend before I auditioned for Masterchef Australia 2011. 

After a 2 hour flight from Sydney with my wife Erika we met up with Masterchef runner up Michael Weldon in his home town before heading out to the Barossa to check out a few food and wine hot spots.

We jumped into the car and after no time at all (thanks to Google maps) we arrived at our first cellar door, Gomersal Wines.  After tasting the full complement of their range we ordered the Grenache, Rose, Fortified wine and their Riesling to be sent home.

Next stop Kellermeister Wines where we were greeted by Sam, this guy’s hospitality as well as his wine knowledge is incredible.  Sam provided us with the full wine tasting experience from white wine, red wine to their fortified blend.  Before we knew it we had placed another order for a mixed dozen to be sent home to Sydney.  Some favourites included Wild Witch Shiraz which is on the upper end of what I would usually spend on a bottle of wine but is my favourite Barossa Shiraz and for my Erika, Boots Gris Blac, her favourite Barossa white wine.

Next stop was Maggie Beers Farmhouse where we were greeted by top 50 Masterchef 2011 contestant John Hughes of Riesling Freak Wine.  If the Barossa is the food capital of Australia, Maggie Beers Farmhouse would be the capital of the Barossa!

Maggies fantastic range of products were all available for tasting at the Farmhouse and with a couple of professional tasters onboard, I think we did 5 laps of the shop.  We were lucky enough to have a tour of the famous kitchen featured in the television cooking show – The Cook and the Chef.  My wife could not resist in taking some happy snaps of Michael, John and I dressed in aprons ‘on set’.

It was a great time had by all at the Barossa Valley from the good food, great wine and amazing company.  Cannot wait to plan another trip soon and do it all again!!!

University of Western Sydney “Cheap, Healthy meals” workshops

Just recently I was asked by UWS to run a series of cooking workshops at their campus’s across Western Sydney. I did 5 2hr demo’s at Penrith, Bankstown, Parramatta, Hawkesbury and Campbelltown.

The idea behind these was to show students (and staff!!) how to constuct a healthy meal both quickly and on a budget.

The dishes I demonstrated were-

Pasta Napolitana

Chicken curry

Fish and salad

Steak and mushroom sauce

Chicken stock

Chicken and mushroom risotto

A good time was had by all, especially ME! Thank you to all of the UWS Staff and students for your help and participation.
